An exceptionally rare and mature release from one of Australia's most internationally acclaimed whisky distilleries, this Sullivan's Cove French Oak Single Cask Tasmanian Single Malt is a remarkable expression of patience, craftsmanship and the individuality that defines the distillery's award-winning single cask programme. Filled on 30 June 2000 and matured for more than 17 years before being decanted on 5 October 2017, this outstanding whisky was drawn exclusively from Barrel HH0377, producing just 455 bottles worldwide. Matured in a French oak ex-Australian fortified wine cask, Barrel HH0377 exemplifies the rich, luxurious style that has made Sullivan's Cove's French Oak releases among the most sought-after Australian whiskies. The extended maturation has allowed the whisky to develop exceptional depth and complexity, with the seasoned French oak imparting elegant layers of dark berries, dried fruit, chocolate, spice and refined oak tannins, while preserving the vibrant fruit character of the Tasmanian spirit. As with every Sullivan's Cove single cask release, this bottling captures the unique personality of one exceptional barrel and can never be replicated.
The nose is rich and beautifully layered, revealing aromas of black cherry, stewed plum, dried fig and blackberry conserve, complemented by notes of vanilla bean, caramelised toffee, polished oak and warm baking spices. The palate is luxuriously smooth and full-bodied, unfolding with flavours of dark chocolate, fruitcake, caramelised raisins, roasted coffee beans, orange marmalade and toasted almonds, balanced by hints of clove, cinnamon and silky French oak tannins. The finish is exceptionally long and elegant, lingering with impressions of rich cocoa, dried fruits, sweet baking spices and refined oak, leaving a beautifully balanced and memorable conclusion.
Filled during 2000, Barrel HH0377 represents spirit from Sullivan's Cove's earliest production years, making it particularly significant to collectors seeking mature bottlings from the distillery before its rise to international acclaim. With more than 17 years of maturation, a limited outturn of just 455 bottles, and provenance from one of the world's most highly awarded whisky producers, this French Oak Single Cask HH0377 is an outstanding addition to any serious whisky collection.
