Filled on 22 August 2008 and matured for almost nine years before bottling on 1 May 2017, this outstanding single malt was drawn exclusively from Barrel TD0312, producing just 298 bottles worldwide. Matured in a French oak ex-Australian fortified wine cask, Barrel TD0312 beautifully showcases Sullivan's Cove's signature maturation style. The seasoned French oak imparts exceptional richness and structure, layering the spirit with luxurious notes of dark berries, dried fruits, fine chocolate and warming spice, while preserving the vibrant character and elegance of the Tasmanian malt. As with every Sullivan's Cove single cask release, this whisky is a genuine one-off, capturing the unique personality of a single carefully selected barrel.

The nose is wonderfully expressive, opening with aromas of black cherry, ripe plum, dried fig and blackberry conserve, complemented by vanilla bean, rich toffee, polished French oak and sweet baking spices. The palate is silky, full-bodied and beautifully balanced, revealing generous flavours of dark chocolate, fruitcake, caramelised raisins, roasted coffee beans, orange marmalade and toasted almonds, supported by hints of clove, cinnamon and refined oak tannins. The finish is exceptionally long and elegant, lingering with impressions of rich cocoa, dried fruits, warming spice and beautifully integrated French oak, leaving a refined and lasting impression.
