An exceptionally limited release from one of Australia's most highly awarded whisky distilleries, this Sullivan's Cove Rare Tasmanian French Oak Cask Matured Single Cask Malt Whisky is a superb expression of the distillery's renowned single cask programme. Filled on 22 August 2008 and matured for almost nine years before bottling on 1 May 2017, this outstanding whisky was drawn exclusively from Barrel TD0312, yielding just 298 bottles worldwide. Matured in a French oak ex-Australian fortified wine cask, Barrel TD0312 exemplifies the rich, fruit-driven style that has become synonymous with Sullivan's Cove's celebrated French Oak releases. The carefully seasoned French oak contributes remarkable depth and structure, layering the spirit with notes of dark berries, dried fruits, rich chocolate and warming spice, while preserving the elegant character of the Tasmanian malt. Individually bottled from a single cask, each release is a true one-off expression, making every bottle unique.
The nose is richly aromatic, revealing enticing notes of black cherry, ripe plum, dried fig and blackberry preserve, complemented by vanilla bean, dark toffee, polished French oak and sweet baking spices. The palate is luxuriously smooth and full-bodied, unfolding with generous flavours of dark chocolate, fruitcake, caramelised raisins, roasted coffee beans, orange marmalade and toasted almonds, enhanced by hints of clove, cinnamon and refined oak tannins. The finish is long, warming and beautifully balanced, lingering with impressions of rich cocoa, dried fruits, sweet spice and elegant French oak, delivering a refined and memorable conclusion.
Produced during one of the most celebrated periods in Sullivan's Cove's history, Barrel TD0312 reflects the craftsmanship that helped establish the distillery among the world's elite whisky producers.
