An exceptionally rare and mature release from one of Australia's most celebrated whisky distilleries, this Sullivan's Cove French Oak Single Cask Tasmanian Single Malt is a remarkable expression of the distillery's award-winning craftsmanship and one of the finest examples of its acclaimed French Oak programme. Filled on 30 June 2000 and matured for more than 17 years before being decanted on 5 October 2017, this outstanding whisky was drawn exclusively from Barrel HH0377, yielding just 455 bottles worldwide. Offered here is the highly desirable Bottle No. 19.
Matured in a French oak ex-Australian fortified wine cask, Barrel HH0377 showcases the rich, full-bodied style that has made Sullivan's Cove's French Oak expressions internationally renowned. More than 17 years of patient maturation have allowed the spirit to develop extraordinary depth and elegance, with the seasoned French oak contributing layers of dark fruit, rich chocolate, baking spice and refined tannins, while preserving the vibrant fruit character that defines the distillery's Tasmanian spirit. Individually bottled from a single cask, this is a one-of-a-kind expression that can never be reproduced.
The nose is deeply expressive, opening with aromas of black cherry, stewed plum, dried fig and blackberry compote, complemented by notes of vanilla bean, rich toffee, polished oak and warm baking spices. The palate is luxuriously smooth and richly textured, revealing flavours of dark chocolate, Christmas cake, caramelised raisins, roasted coffee beans, orange marmalade and toasted almonds, balanced by hints of clove, cinnamon and elegant French oak tannins. The finish is exceptionally long and refined, lingering with impressions of cocoa, dried fruits, sweet spice and beautifully integrated oak, delivering a memorable and sophisticated conclusion.
Filled during 2000, Barrel HH0377 originates from Sullivan's Cove's formative years, making it especially significant to collectors seeking early bottlings from the distillery before its rise to global prominence. The added appeal of being Bottle No. 19 further enhances its desirability.
