A highly collectible release from one of Australia's most celebrated whisky distilleries, this Sullivan's Cove Rare Tasmanian American Oak Cask Matured Single Cask Malt Whisky is an exceptional expression of the distillery's renowned craftsmanship and dedication to single cask maturation. Filled on 21 May 2001 and matured for almost 16 years before bottling on 28 February 2017, this remarkable whisky was drawn exclusively from Barrel HH0614, yielding just 266 bottles worldwide. Matured in a first-fill American oak ex-Bourbon cask, Barrel HH0614 beautifully demonstrates the elegant, fruit-forward style that has made Sullivan's Cove's American Oak expressions among the most sought-after Australian single malts. The extended maturation has allowed the whisky to develop exceptional richness and complexity, while the premium American oak contributes classic layers of vanilla, honey, butterscotch and toasted coconut without overshadowing the vibrant Tasmanian spirit. Individually bottled from a single cask, this release is a unique expression that can never be replicated.
The nose is refined and inviting, revealing aromas of vanilla bean, honeycomb, baked apple and ripe pear, complemented by notes of crème brûlée, toasted coconut, caramel fudge and gentle oak spice. The palate is luxuriously smooth and full-bodied, unfolding with flavours of salted caramel, stone fruits, malted biscuits, roasted almonds and creamy milk chocolate, enhanced by hints of orange zest, cinnamon and polished American oak. The finish is exceptionally long and elegant, lingering with impressions of warm vanilla, honeyed malt, toasted coconut and delicate baking spice, leaving a beautifully balanced and memorable conclusion.
Filled during 2001, Barrel HH0614 represents spirit from Sullivan's Cove's early years, making it particularly significant to collectors seeking mature bottlings from the distillery before its rise to international acclaim. With a limited outturn of just 266 bottles, almost 16 years of maturation, and provenance from one of the world's most highly awarded whisky producers, this Rare American Oak Single Cask HH0614 is an outstanding addition to any premium whisky collection.
