Filled on 7 December 1999 and matured for more than 17 years before bottling on 29 June 2017, this outstanding whisky was drawn exclusively from Barrel HH0088, producing just 215 bottles worldwide. Matured in a first-fill American oak ex-Bourbon cask, Barrel HH0088 beautifully showcases the elegant, fruit-driven style that has made Sullivan's Cove's American Oak releases among the most sought-after Australian whiskies. The extended maturation has allowed the whisky to develop remarkable complexity while preserving the vibrancy of the spirit, with the American oak imparting classic notes of vanilla, honey, caramel and toasted coconut. Individually bottled from a single cask, this release is a one-of-a-kind expression that can never be replicated.
The nose is rich and refined, revealing aromas of vanilla bean, honeycomb, ripe pear and baked apple, complemented by notes of crème brûlée, toasted coconut, butterscotch and soft oak spice. The palate is luxuriously smooth and full-bodied, offering layers of salted caramel, stone fruits, malted biscuits, roasted macadamia and creamy milk chocolate, balanced by hints of orange zest, cinnamon and polished American oak. The finish is exceptionally long and elegant, lingering with impressions of warm vanilla, honeyed malt, toasted coconut and delicate baking spice, delivering a beautifully balanced and memorable conclusion.
Filled during 1999, this release originates from Sullivan's Cove's earliest production years, making it particularly significant for collectors seeking historic bottlings from the distillery.
