A superb limited release from one of Australia's most celebrated whisky distilleries, this Sullivan's Cove Rare Double Cask Tasmanian Single Malt is a masterfully balanced expression that highlights the distillery's renowned expertise in marrying exceptional mature casks. Bottled on 21 July 2017, this release carries Double Cask No. DC093, with the youngest whisky distilled on 21 November 2005. Limited to just 1,377 bottles worldwide, this offering is Bottle No. 760.
The Rare Double Cask series is produced by carefully marrying a select number of premium casks to create a whisky that combines the individuality of mature Tasmanian spirit with remarkable balance and consistency. Unlike Sullivan's Cove's celebrated single cask bottlings, each Double Cask release is designed to showcase the harmonious interplay of fruit, oak and spice, while maintaining the elegant, fruit-forward house style that has earned the distillery international recognition. Bottled at 47.5% ABV, Double Cask DC093 is an increasingly scarce expression from one of the distillery's most sought-after eras.
The nose is expressive and beautifully layered, opening with aromas of vanilla bean, honeycomb, baked pear and ripe peach, supported by notes of golden toffee, toasted almonds and delicate baking spice. The palate is rich, silky and exceptionally well balanced, revealing flavours of salted caramel, malt biscuits, dried apricot, roasted hazelnuts and creamy milk chocolate, complemented by hints of orange zest, cinnamon and polished oak. The finish is long, smooth and elegant, lingering with impressions of vanilla fudge, butterscotch, gentle spice and toasted oak, delivering a refined and satisfying conclusion.
With mature spirit dating back to 2005, a limited outturn of just 1,377 bottles, and provenance from one of the world's most highly awarded whisky producers, this Rare Double Cask DC093 represents an increasingly collectible expression and an outstanding addition to any premium whisky collection or investment portfolio.
