Bottled on 21 July 2017, this release is identified as Double Cask No. DC093, with the youngest whisky distilled on 21 November 2005. Limited to 1,377 bottles worldwide, this offering is the highly desirable Bottle No. 9.
The Rare Double Cask series represents Sullivan's Cove's mastery of marrying carefully selected mature casks into a single harmonious expression. Rather than focusing on the individuality of one barrel, each Double Cask release is crafted to showcase the complementary qualities of multiple casks, resulting in a whisky of exceptional depth, elegance and consistency. Bottled at 47.5% ABV, Double Cask DC093 delivers the distillery's signature fruit-forward character alongside beautifully integrated oak influence, making it one of the standout releases from the early Double Cask range.
The nose is rich and inviting, revealing aromas of vanilla bean, honeycomb, baked apple and ripe apricot, complemented by notes of golden toffee, toasted almonds and warm baking spices. The palate is smooth and generously layered, offering flavours of salted caramel, malted biscuits, dried orchard fruits, roasted hazelnuts and creamy milk chocolate, balanced by hints of candied citrus peel, cinnamon and polished oak. The finish is long, refined and warming, lingering with impressions of vanilla fudge, butterscotch, gentle spice and sweet malt, leaving a lasting impression of balance and finesse.
