Filled on 12 October 2000 and patiently matured for more than 16 years before being decanted on 14 April 2017, this outstanding whisky was drawn exclusively from Barrel HH0516, producing just 471 bottles worldwide. Matured in a French oak ex-Australian fortified wine cask, Barrel HH0516 showcases the rich, luxurious style that has become synonymous with Sullivan's Cove's globally acclaimed French Oak releases. Extended maturation has allowed the spirit to develop exceptional depth and elegance, with the seasoned French oak imparting layers of dark fruit, spice and refined tannins while preserving the vibrant character of the Tasmanian malt. Every Sullivan's Cove single cask is bottled individually, ensuring each release is a unique expression that can never be replicated.
The nose is rich and beautifully layered, opening with aromas of black cherry, stewed plum, dried fig and blackberry conserve, complemented by notes of vanilla bean, dark toffee, polished oak and warm baking spices. The palate is luxurious and full-bodied, revealing flavours of fruitcake, dark chocolate, caramelised raisins, roasted coffee, orange marmalade and toasted almonds, supported by hints of clove, cinnamon and silky French oak tannins. The finish is exceptionally long and elegant, lingering with impressions of cocoa, dried fruits, sweet spice and refined oak, delivering a richly satisfying and memorable conclusion.
Filled in 2000, this release represents spirit from Sullivan's Cove's earliest production years, making it particularly significant to collectors. Combined with its extended maturation, limited outturn of 471 bottles, and provenance from the distillery whose French Oak expressions helped place Australian whisky firmly on the world stage, French Oak Single Cask HH0516 is an outstanding acquisition for serious collectors, investors and connoisseurs.
