Distilled on 12 September 2005 and matured for over 12 years before bottling on 15 January 2018, this outstanding whisky was drawn exclusively from Barrel TD0039, producing just 512 bottles worldwide. Matured exclusively in a French oak ex-Australian fortified wine cask, Barrel TD0039 exemplifies Sullivan's Cove's signature maturation style. The seasoned French oak imparts remarkable depth and structure, layering rich dark fruits, warming spice and refined tannins over the distillery's elegant Tasmanian spirit. Every barrel is bottled individually, making each release a truly unique expression of the interaction between spirit, cask and time.
The nose is rich and inviting, opening with aromas of black cherry, stewed plum, dried raisins and blackberry compote, complemented by notes of vanilla bean, caramelised toffee, cinnamon and polished French oak. The palate is luxuriously full-bodied, revealing layers of dark chocolate, fruitcake, caramelised figs, roasted coffee beans and orange marmalade, balanced by hints of clove, toasted almonds and sweet baking spice. The finish is exceptionally long and elegant, lingering with impressions of cocoa, dried fruits, gentle oak tannins and warming spice, leaving a refined and memorable conclusion.
