Distilled on 12 September 2005 and matured for more than 12 years before bottling on 15 January 2018, this outstanding whisky was drawn exclusively from Barrel TD0039, producing just 512 bottles worldwide. Matured in a French oak ex-Australian fortified wine cask, Barrel TD0039 reflects the signature style that has become synonymous with Sullivan's Cove's global success. The interaction between premium French oak and the distillery's refined Tasmanian spirit produces a whisky of remarkable elegance, layering rich fruit, spice and oak while preserving the purity and character of the underlying malt. Each cask is bottled individually, ensuring every release is a genuine one-of-one expression of time, timber and craftsmanship.
The nose is beautifully fragrant, offering aromas of black cherry, plum compote, raisin and dried cranberry, intertwined with notes of vanilla bean, dark toffee, cinnamon and polished oak. The palate is rich and velvety, revealing generous flavours of fruitcake, dark chocolate, caramelised figs, roasted coffee beans and orange marmalade, balanced by hints of clove, toasted almonds and sweet baking spice. The finish is exceptionally long and refined, lingering with impressions of cocoa, dried fruits, warming spice and elegant French oak tannins, delivering a beautifully rounded and memorable conclusion.
