Distilled on 6 September 2005 and matured for almost 11 years before bottling on 1 July 2016, this exceptional whisky was drawn exclusively from Barrel TD0034, yielding 501 bottles worldwide. Sullivan's Cove's French Oak expressions are matured in French oak ex-Australian fortified wine casks, a maturation style that has become synonymous with the distillery's global success. These casks impart exceptional richness and depth, layering the spirit with notes of dark fruit, spice and luxurious sweetness while allowing the distinctive character of the Tasmanian malt to remain at the forefront. Every barrel is bottled individually, ensuring each release is a unique snapshot of the interaction between spirit, oak and time.
The nose is deep and expressive, opening with aromas of dark cherries, plum compote, raisins and blackberry conserve, complemented by notes of vanilla pod, cinnamon, nutmeg and polished oak. The palate is rich, velvety and beautifully structured, revealing layers of toffee, dark chocolate, dried figs, fruitcake and roasted coffee beans, balanced by hints of orange peel, clove and toasted almonds. The finish is long, warming and elegant, lingering with impressions of rich cocoa, sweet baking spices, dried fruits and refined French oak tannins, leaving a memorable and luxurious conclusion.
Bottled during the same era that established Sullivan's Cove as one of the world's most awarded whisky producers, this release reflects the quality that culminated in the distillery receiving the prestigious World's Best Single Malt title at the 2014 World Whiskies Awards, firmly placing Australian whisky on the global stage. With a limited outturn of 501 bottles, nearly 11 years of maturation, and provenance from one of the industry's most respected distilleries, French Oak Cask TD0034 represents a highly desirable acquisition for collectors, investors and connoisseurs alike.
