Distilled on 6 June 2000 and matured for over 17 years before bottling on 25 October 2017, this outstanding whisky was drawn exclusively from Barrel HH0337, producing just 195 bottles worldwide. Matured exclusively in a first-fill American oak ex-Bourbon cask, Barrel HH0337 showcases the hallmark style of Sullivan's Cove's celebrated American Oak series. Extended maturation in premium American oak has imparted exceptional depth and refinement, contributing classic notes of vanilla bean, honey, butterscotch and toasted coconut, while allowing the distillery's signature fruit-forward spirit to shine. With a remarkably small outturn of only 195 bottles, this release stands among the rarer and more desirable American Oak expressions produced by Sullivan's Cove.
This distinguished cask was awarded a Gold Medal in the Single Cask Single Malt 13–20 Years category at the 2019 World Whiskies Awards, recognising the exceptional quality and craftsmanship behind this remarkable release.
The nose opens with elegant aromas of vanilla custard, honeycomb, ripe pear and white peach, layered with notes of toasted coconut, crème brûlée and gentle oak spice. The palate is rich, creamy and beautifully balanced, revealing flavours of salted caramel, baked apple, malted biscuits, roasted almonds and soft baking spices, complemented by hints of citrus zest and polished oak. The finish is long, silky and refined, lingering with impressions of warm vanilla, butterscotch, toasted coconut and delicate spice, leaving a memorable and harmonious conclusion.
