Matured in a first-fill American oak ex-Bourbon cask, Barrel TD0137 demonstrates the refined elegance for which Sullivan's Cove's American Oak releases have become internationally celebrated. The lengthy maturation has allowed the whisky to develop exceptional complexity, with the American oak contributing classic notes of vanilla, caramel, honey and toasted coconut, while preserving the distillery's signature fruit-forward spirit. With an outturn of only 172 bottles, this is among the rarer American Oak single cask releases produced by Sullivan's Cove.
The nose is rich and inviting, opening with aromas of vanilla bean, honeycomb, baked apple and ripe pear, complemented by layers of toasted coconut, butterscotch and delicate oak spice. The palate is luxuriously smooth and beautifully integrated, revealing flavours of crème brûlée, salted caramel, ripe stone fruits, malted biscuits and roasted almonds, supported by subtle hints of orange zest, cinnamon and polished oak. The finish is long, elegant and wonderfully balanced, lingering with notes of warm vanilla, honeyed malt, gentle baking spice and refined American oak, leaving a lasting impression of finesse and maturity.
