An exceptional limited release from one of Australia's most acclaimed whisky distilleries, this Sullivan's Cove Rare Double Cask Edition is a masterfully composed marriage of mature Tasmanian single malts, crafted to deliver the depth, elegance and complexity that have made Sullivan's Cove a benchmark for Australian whisky. Bottled on 1 February 2018, this release bears Double Cask No. DC096, with the youngest whisky distilled on 29 December 2007. Just 1,311 bottles were produced worldwide, with this offering comprising Bottle No. 357, presented sealed in its original box.
The Rare Double Cask Edition series showcases the distillery's expertise in marrying a select number of exceptional casks to create a whisky that is both harmonious and richly layered. Rather than expressing the character of a single barrel, each Double Cask release is designed to highlight the complementary qualities of carefully chosen mature whiskies, resulting in an expression of remarkable balance and finesse. Bottled at 47.5% ABV, Double Cask DC096 captures Sullivan's Cove's signature fruit-forward style while integrating beautifully with carefully matured oak influence.
The bouquet opens with inviting aromas of vanilla bean, honeycomb, baked pear and ripe peach, complemented by notes of toffee, toasted almonds and delicate baking spice. On the palate, flavours of salted caramel, malted biscuits, dried apricot, roasted hazelnuts and silky milk chocolate unfold in generous layers, enhanced by touches of candied citrus peel, cinnamon and polished oak. The finish is long, smooth and elegant, leaving lingering impressions of butterscotch, vanilla cream, warming spice, toasted oak and sweet malt, creating a refined and memorable drinking experience.
With an outturn of only 1,311 bottles, mature spirit dating back to 2007, and the pedigree of one of the world's most highly awarded whisky producers, this Rare Double Cask Edition DC096 represents an increasingly collectible release and a superb addition to any premium whisky collection.
