Filled on 6 September 2005 and matured for almost 11 years before bottling on 1 July 2016, this outstanding whisky was drawn exclusively from Barrel TD0034, yielding 501 bottles worldwide. Matured in a French oak ex-Australian fortified wine cask, Barrel TD0034 beautifully illustrates the hallmark character of Sullivan's Cove's celebrated French Oak programme. The seasoned French oak imparts remarkable richness and structure, layering vibrant notes of dark berries, dried fruit, chocolate and warming spice over the distillery's elegant Tasmanian spirit. Individually bottled from a single cask, each release captures the unique influence of one exceptional barrel, ensuring every bottling is genuinely one of a kind.
The nose is deep and inviting, revealing aromas of black cherry, plum compote, raisins and blackberry preserve, complemented by notes of vanilla bean, rich toffee, polished oak and sweet baking spices. The palate is luxurious and beautifully textured, unfolding with flavours of dark chocolate, fruitcake, caramelised figs, roasted coffee beans, orange marmalade and toasted almonds, balanced by hints of clove, cinnamon and silky French oak tannins. The finish is exceptionally long and refined, lingering with impressions of rich cocoa, dried fruits, warming spice and elegant oak, leaving a memorable and sophisticated conclusion.
