A rare and exceptionally mature release from one of Australia's most acclaimed whisky distilleries, this Sullivan's Cove Rare Tasmanian American Oak Cask Matured Single Cask Malt Whisky is an outstanding example of the craftsmanship and patience that have established Sullivan's Cove among the world's finest single malt producers. Filled on 13 June 2000 and matured for more than 15 years before bottling on 29 January 2016, this remarkable whisky was drawn exclusively from Barrel HH0354, producing just 262 bottles worldwide. Matured exclusively in a first-fill American oak ex-Bourbon cask, Barrel HH0354 beautifully captures the refined character for which Sullivan's Cove's American Oak releases have become internationally renowned. Years of careful maturation have developed exceptional depth and elegance, with the oak imparting classic notes of vanilla bean, honeycomb, caramel and toasted coconut, while allowing the distillery's vibrant orchard fruit character to shine. As with every Sullivan's Cove single cask release, this whisky is a genuine one-off expression that can never be replicated. Bottled at 47.5% ABV, it is a superb example of the distillery's celebrated American Oak style.

The nose is beautifully expressive, opening with aromas of vanilla custard, baked apple, ripe pear and white peach, layered with notes of honeycomb, crème brûlée, toasted coconut and gentle oak spice. The palate is rich, silky and impeccably balanced, revealing flavours of salted caramel, stone fruits, malted biscuits, roasted almonds and creamy milk chocolate, complemented by hints of candied citrus peel, cinnamon and polished American oak. The finish is exceptionally long and refined, lingering with impressions of warm vanilla, honeyed malt, toasted coconut and delicate baking spice, delivering a smooth and memorable conclusion.

Filled during 2000, Barrel HH0354 originates from Sullivan's Cove's early production years, making it particularly significant to collectors seeking mature bottlings from the distillery before its rise to global prominence. With a limited outturn of just 262 bottles, more than 15 years of maturation, and provenance from one of the world's most highly awarded whisky producers, this Rare American Oak Single Cask HH0354 is an outstanding addition to any serious whisky collection.
