A rare and exceptionally mature release from one of Australia's most internationally acclaimed whisky distilleries, this Sullivan's Cove Rare Tasmanian American Oak Cask Matured Single Cask Malt Whisky is a remarkable expression of patience, craftsmanship and the individuality that defines the distillery's celebrated single cask programme. Filled on 21 May 2001 and matured for almost 16 years before bottling on 28 February 2017, this outstanding whisky was drawn exclusively from Barrel HH0614, producing just 266 bottles worldwide. Matured exclusively in a first-fill American oak ex-Bourbon cask, Barrel HH0614 showcases the refined elegance for which Sullivan's Cove's American Oak releases have become renowned. Extended maturation has allowed the spirit to develop exceptional complexity while preserving its vibrant orchard fruit character, with the oak contributing classic layers of vanilla bean, honeycomb, caramel and toasted coconut. Individually bottled from a single cask, this release is a true one-off expression that captures the unique interaction between spirit, oak and time.
The nose is beautifully expressive, opening with aromas of vanilla custard, ripe pear, baked apple and white peach, complemented by notes of honeycomb, butterscotch, toasted coconut and delicate oak spice. The palate is rich, silky and impeccably balanced, revealing flavours of salted caramel, crème brûlée, stone fruits, malted biscuits, roasted almonds and creamy milk chocolate, enhanced by subtle hints of orange zest, cinnamon and polished American oak. The finish is exceptionally long and elegant, lingering with impressions of warm vanilla, honeyed malt, toasted coconut and gentle baking spice, delivering a refined and memorable conclusion.
Drawn from spirit distilled in 2001, Barrel HH0614 represents an important period in Sullivan's Cove's early production history, prior to the distillery's rise to global prominence. With a limited outturn of just 266 bottles, almost 16 years of maturation, and provenance from one of the world's most highly awarded whisky producers, this Rare American Oak Single Cask HH0614 is an outstanding opportunity for collectors, investors and connoisseurs seeking a scarce and mature Australian single malt.
