An exceptionally rare and mature release from one of Australia's most highly awarded whisky distilleries, this Sullivan's Cove American Oak Single Cask Tasmanian Single Malt is a superb example of the elegance and complexity that have made the distillery's American Oak expressions internationally renowned. Filled on 19 May 2000 and matured for more than 17 years before bottling on 30 July 2017, this remarkable whisky was drawn exclusively from Barrel HH0312, producing just 200 bottles worldwide. Matured in a first-fill American oak ex-Bourbon cask, Barrel HH0312 beautifully illustrates the hallmark style of Sullivan's Cove's American Oak releases. The slow maturation in premium American oak has developed exceptional depth while preserving the vibrant fruit character of the Tasmanian spirit, delivering classic notes of vanilla, caramel, honey and toasted coconut supported by a robust malt backbone. As with every Sullivan's Cove single cask bottling, this whisky is a one-of-a-kind expression, with no two barrels ever producing the same result.
The nose is rich and inviting, revealing aromas of vanilla bean, honeycomb, ripe pear and baked apple, layered with notes of crème brûlée, butterscotch, toasted coconut and delicate oak spice. The palate is luxuriously smooth and full-bodied, unfolding with flavours of salted caramel, stone fruits, malted biscuits, roasted macadamia and creamy milk chocolate, complemented by hints of orange zest, cinnamon and polished American oak. The finish is exceptionally long and elegant, lingering with impressions of warm vanilla, honeyed malt, toasted coconut and gentle baking spice, leaving a beautifully balanced and memorable conclusion.
Filled during 2000, this release represents spirit from Sullivan's Cove's early production years, making it particularly significant to collectors seeking historic bottlings from the distillery's celebrated single cask programme. With more than 17 years of maturation, an exceptionally limited outturn of just 200 bottles, and provenance from one of the world's most acclaimed whisky producers, American Oak Single Cask HH0312 is an outstanding addition to any serious whisky collection.
