A remarkable release from one of Australia's most internationally acclaimed whisky distilleries, this Sullivan's Cove American Oak Single Cask Tasmanian Single Malt is an exceptionally mature expression from the distillery's formative years. Filled on 1 June 2000 and matured for more than 17 years before bottling on 25 October 2017, this outstanding whisky was drawn exclusively from Barrel HH0333, yielding just 244 bottles worldwide. Matured in a first-fill American oak ex-Bourbon cask, Barrel HH0333 beautifully showcases the style that has earned Sullivan's Cove's American Oak releases international recognition. The extended maturation has allowed the whisky to develop extraordinary depth while preserving the vibrant fruit character of the spirit. Layers of vanilla, honeycomb, toasted coconut and rich caramel are seamlessly integrated with the distillery's elegant malt profile, creating a whisky of remarkable balance and refinement. As with every Sullivan's Cove single cask release, this bottling is a unique expression that can never be repeated.
The nose is rich and inviting, opening with aromas of vanilla bean, honeycomb, ripe pear and baked apple, complemented by notes of crème brûlée, butterscotch, toasted coconut and delicate oak spice. The palate is luxuriously smooth and full-bodied, revealing layers of salted caramel, stone fruits, malt biscuits, roasted macadamia and creamy milk chocolate, balanced by hints of orange zest, cinnamon and polished American oak. The finish is exceptionally long and elegant, lingering with impressions of warm vanilla, honeyed malt, toasted coconut and gentle baking spice, delivering a refined and memorable conclusion.
Filled during 2000, this release represents some of Sullivan's Cove's earliest mature spirit, making it particularly significant for collectors seeking historic bottlings from the distillery's award-winning cask programme. With more than 17 years of maturation, an exceptionally limited outturn of 244 bottles, and provenance from one of the world's most highly awarded whisky producers, American Oak Single Cask HH0333 is an outstanding addition to any premium whisky collection.
