Distilled on 12 September 2005 and matured for more than 12 years before bottling on 15 January 2018, this outstanding whisky was drawn exclusively from Barrel TD0039, producing just 512 bottles worldwide. Matured in a French oak ex-Australian fortified wine cask, Barrel TD0039 showcases the distinctive maturation style that has become synonymous with Sullivan's Cove's award-winning French Oak range. The seasoned French oak imparts exceptional richness and complexity, layering vibrant notes of dark fruit, spice and oak over the distillery's refined Tasmanian spirit. As with all Sullivan's Cove single cask releases, every bottle is a unique expression, capturing the individual character of one carefully selected barrel.
The nose is beautifully aromatic, revealing enticing notes of ripe black cherries, plum compote, raisins and blackberry preserve, intertwined with vanilla bean, rich toffee, cinnamon and polished French oak. The palate is luxuriously smooth and richly textured, unfolding with layers of dark chocolate, Christmas cake, caramelised figs, roasted coffee, orange marmalade and toasted almonds, complemented by subtle hints of clove and baking spice. The finish is exceptionally long and refined, lingering with impressions of cocoa, dried fruits, warming spice and elegant oak tannins, delivering a sophisticated and memorable conclusion.
