An exceptionally mature and highly collectible release from one of Australia's most celebrated whisky distilleries, this Sullivan's Cove American Oak Cask single malt is a rare expression showcasing the elegance and complexity that have made the distillery a three-time winner of the world's highest whisky honours. Distilled on 6 June 2000 and matured for more than 17 years before bottling on 25 October 2017, this outstanding whisky was drawn exclusively from Barrel HH0337, producing a mere 195 bottles worldwide. Matured in a first-fill American oak ex-Bourbon cask, HH0337 exemplifies the style for which Sullivan's Cove's American Oak releases have become internationally renowned. American oak provides a slow, graceful maturation, allowing the distillery's vibrant Tasmanian spirit to develop remarkable depth while imparting layers of vanilla, caramel, coconut and orchard fruit without overpowering the whisky's natural character. The result is an exceptionally refined and beautifully balanced single malt.
This celebrated cask was recognised with a Gold Medal in the Single Cask Single Malt 13–20 Years category at the 2019 World Whiskies Awards, further cementing its reputation as one of Sullivan's Cove's standout American Oak releases.
The nose opens with enticing aromas of vanilla bean, honeycomb, ripe pear and white peach, intertwined with notes of coconut, butterscotch and toasted oak. The palate is luxuriously creamy and full-bodied, revealing layers of caramel, stone fruits, crème brûlée, malted biscuits and delicate baking spice, supported by subtle floral nuances and refined oak. The finish is exceptionally long and elegant, lingering with impressions of warm vanilla, honey, toasted coconut and polished American oak, leaving a beautifully balanced and memorable conclusion.
